Romanian Soup: Ardei Umpluti

Indulge in the rich flavors of Romanian comfort with Ardei Umpluti soup 🌶️ Savoury peppers, meat, and rice dance in a broth of warmth and tradition.

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off peppers, remove seeds, and blanch in boiling water for 5 minutes.
  3. In a pan, sauté onions and garlic. Add ground meat, cook until browned.
  4. Stir in cooked rice, tomatoes, paprika, salt, and pepper. Mix well.
  5. Stuff each pepper with the meat and rice mixture.
  6. Place stuffed peppers in a baking dish. Pour tomato sauce and broth over them.
  7. Cover with foil and bake for 40-45 minutes.
  8. Remove foil, bake for an additional 15 minutes until tops are browned.
  9. Serve hot. Enjoy your Ardei Umpluti!

Ingredients:

  • 6 large bell peppers
  • 1 cup rice, cooked
  • 1 lb ground meat (beef or pork)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 cup broth
