Instructions:
Hummus:
- In a food processor, blend chickpeas, tahini, garlic, lemon juice, and olive oil until smooth.
- Add salt to taste and adjust consistency with water if needed. Blend again.
Crispy Chickpeas:
- Preheat oven to 400°F (200°C).
- Toss dried chickpeas with olive oil, smoked paprika, cumin, and salt.
- Spread on a baking sheet and bake for 20-30 minutes until golden and crispy. Let cool.
Assembling Tapas:
- Spread a generous layer of hummus on a serving platter or individual dishes.
- Scatter crispy chickpeas over the hummus.
- Sprinkle pickled onions, fresh coriander, and chili flakes for added flavor and color.
- Optionally, add a dash of chili powder for extra heat.
- Finish with a generous sprinkling of vibrant pomegranate seeds.
Presentation:
