Savory Jamaican Lamb and Beef Soup with Dumplings

Instructions:

  1. Sauté diced Lamb and Beef until browned in a pot.
  2. Add chopped Onion, diced Carrots, Potatoes, and Sauté until vegetables soften.
  1. Pour in Beef and Lamb Stock. Add Thyme, Salt, and Pepper.
  2. Simmer until meat is tender. Add drained Red Kidney Beans and Jamaican dumpling.
  3. Continue simmering until flavours meld.
  4. Garnish with sliced Green Onions before serving.

Ingredients:

  • 250g diced Lamb.
  • 250g diced Beef.
  • 1 Onion, chopped.
  • 1 cup diced Carrots.
  • 1 cup diced Potatoes.
  • 2 stalks Green Onions, sliced.
  • 1 tsp Thyme
  • 4 cups Beef Stock
  • 4 cups Lamb Stock
  •  Jamaican Dumplings
  • 2 cans Red Kidney Beans, drained.
  • Salt and Pepper to taste

Jamaican Boiled Dumpling Recipe

Ingredients:

  • 2 cups All-Purpose Flour
  • 1/2 tsp Salt
  • Water (as needed)

Instructions:

  1. In a bowl, combine All-Purpose Flour and Salt.
  2. Gradually add water while kneading to form a firm, smooth dough.
  3. Divide the dough into small portions, rolling each into a ball.
  4. Flatten each ball into a disc or shape as desired.
  5. Bring a pot of water to a boil, adding a pinch of salt if desired.
  6. Gently place the dumplings into the boiling water.
  7. Boil for about 15-20 minutes or until dumplings are cooked through.
  8. Check for doneness by inserting a fork; dumplings should be firm.
  9. Remove dumplings with a slotted spoon and let them cool slightly.
  10. Serve these Jamaican boiled dumplings alongside your favourite dishes.
