Instructions:
- In a large bowl, combine fresh corn, cheddar cheese, flour, baking powder, diced scotch bonnet, smoked paprika, chili flakes, cayenne pepper, green onions, salt, and pepper.
- Add beaten eggs and Philmore Harrison Jerk Marinade to the mixture. Stir until well combined. The batter should be thick enough to hold its shape.
- Heat vegetable oil in a frying pan over medium heat.
- Spoon the batter into the hot oil, forming small patties. Fry until golden brown on both sides, approximately 3-4 minutes per side.
- Remove the fritters and place them on a paper towel to absorb excess oil.
- Serve the Jerk-infused Cheddar and Sweet Corn Fritters warm with your favourite dipping sauce.
