Easy 30- Minutes Homemade Tomato & Oregano Soup

Delightful Tomato and Oregano soup is perfect for the crisp weather 🍅🌿. Its rich flavours bring warmth to autumn evenings.

Instructions:

  • Heat olive oil in a large pot. Sauté onions and garlic until translucent.
  • Add diced tomatoes, oregano, salt, and pepper. Cook for 10 minutes.
  • Pour in vegetable broth. Bring to a boil, then simmer for 20 minutes.
  • Blend the soup until smooth using a hand blender or food processor.

Adjust seasoning if needed. Serve hot, garnished with fresh Chive

Ingredients:

  • 1.5 kg ripe tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh chive leaves for garnish
