KUBA JERK CHICKEN

My Jerk Chicken: “`

– marinate 2 chicken legs in 1 teaspoon of salt and 1 tablespoon of sugar, let it rest for at least 2h;
-Dry meat with paper towel, at this stage you can shape your portions of chicken; 
– Cover meat with nice layer of Philmore’s jerk marinade, try to get spices deep into meat using your hands; 

– Let it marinate for at least 12h;-In the meantime of marinating finely dice 1 shallot,1 cucumber and 1 mango and 1 red bell pepper, combine it with Philmore’s BBQ sauce, that’s your salsa;- Cook 100g of fragrant rice according to producer’s instructions and cool it down.

Peel zest of 1 lime and 1 lemon (keep fruits for juice), cut coriander leaves into nice pieces, drain black (alternatively red) beans. 

Combine it together adding citrus juice according to your preferences, that’s the point to salt our rice; Roast chicken for 1h in 150 Celsius. 

Decorate plate with Philmore’s BBQ sauce and coriander leaves , fry rice & bean on neutral oil, medium heat until warm, moist and shiny; – You got it all, play with plating: serve chicken, salsa and rice your own way!

1 cucumber finely dice
1 mango finely dice
