Spicy Chorizo and Lamb with Spaghetti

Here’s a recipe for a flavourful Spaghetti with Chorizo, Lamb, and Vegetable Stir-fry

INSTRUCTIONS

Prepare the Spaghetti:

Cook the spaghetti according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

Cook the Chorizo and Lamb:

In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
Add the sliced chorizo and cook for 2-3 minutes until it starts to release its flavourful oils.
Add the sliced lamb and cook for another 2-3 minutes until it’s browned. Remove the chorizo and lamb from the skillet and set aside.

Sauté the Vegetables:

In the same skillet, add the remaining tablespoon of olive oil.

Add the minced garlic, sliced red onion, and sliced peppers. Stir-fry for about 3-4 minutes until the
vegetables are slightly softened but still have a bit of crunch.

Add the Pak Choi:

Add the pak choi leaves to the skillet and continue to stir-fry for another 2 minutes until they wilt slightly.

Combine Everything:

Return the cooked chorizo and lamb to the skillet. Toss everything together to combine.

Add the Spaghetti:

Add the cooked spaghetti to the skillet and toss well to coat the pasta with the flavourful mixture. If it seems dry, you can add a splash of chicken or vegetable broth to moisten it.

Season and Garnish:

Season with salt and pepper to taste. You can also add a bit more olive oil if desired for extra richness.Optionally, garnish with fresh chopped parsley for a burst of colour and freshness.

Serve:

Divide the spaghetti and stir-fry mixture among serving plates.

Salt and pepper to taste
