FRIED RICE RECIPE:
Serves 4
2 tablespoons grapeseed oil, separated
2 eggs, scrambled
¾ cup carrots
¾ cup fresh peas
3 green onions chopped with white and green parts separated
1 garlic clove minced fine
2 cups precooked rice
SOY SAUCE MIXTURE:
3 tablespoons soy sauce
1 teaspoon dark soy sauce
1 teaspoon sesame oil
Combine the soy sauce, dark soy sauce and oyster sauce in a bowl and stir well. Set aside.
Add 1 tablespoon oil to a hot wok and swirl to coat. Add the egg and scrambled. Remove scrambled egg and set aside.
Add 1 tablespoon oil to the wok and swirl to coat. Add the carrots and stir-fry for 1 minute.
Add the peas, green onions (white part) and garlic to the wok and stir-fry for 30 seconds.
Add the pre-cooked rice and stir-fry for 3 minutes.
Add the soy sauce mixture and stir-fry for 3 minutes.
Return the scrambled eggs, green onions (green part) and sesame oil and stir-fry for 30 seconds.
GRILLED SHRIMP:
6 peeled and deveined shrimp per person
1-2 tablespoons oil
Salt and pepper to taste
Garlic and onion powder to taste (2 teaspoons each is good)
Bamboo skewers soaked for one hour in cold water.
Fresh lemon juice
Mix the shrimp, oil and seasonings in a large bowl. Toss to coat.
Thread the shrimp onto the skewers and grill oner high heat for 2 minutes per side.
Remove from grill and squeeze fresh lemon juice over the shrimp.
Serve the shrimp skewers over the Fried Rice.
