INSTRUCTIONS

Season lamb with dry seasoning then let the lamb sit in the dry seasoning for 15-20 minutes. 

Add wet seasoning, and mix everything up using a spoon or gloves, as the jerk seasoning is very peppery. 

Once mixed, an aroma of jerk seasoning and fresh thyme should come through.

Heat a large frying pan with olive oil over medium heat and add the lamb, flipping once making sure it’s golden brown on each side and until internal temperature reaches 165°F, about 3-5 minutes each side.. Remove lamb from the pan and set aside.

Warm your wraps, stack up with the jerk lamb, salad, avocado, coleslaw and plenty of extra jerk sauce and jerk mayo. Get them wrapped up and enjoy.

Green Seasoning

  • ½ cup thyme leaves
  • ½ of an onion
  • 2 garlic cloves
  • 1 scotch bonnet pepper
  • Water

Jerk Lamb

  • 2.5 pounds of boneless lamb, cut in 1-inch chunks
  • ¼ teaspoon. salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic Powder
  • 1 teaspoon onion Powder
  • 1 teaspoon Old Bay
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground allspice
