
Instructions:
- Rinse the rice under cold water until the water runs clear.
- In a large skillet or pan, heat vegetable oil over medium heat. Add diced onions and sauté until translucent.
- Add minced garlic to the onions and sauté for an additional 1-2 minutes until fragrant.
- Stir in the rice and toast for 2-3 minutes until slightly golden.
- Add vegetable broth, diced tomatoes (with their juice), roasted red pepper,jalapeno pepper edamame soya beans, ground cumin, paprika, cayenne pepper, Cajun black seasoning, salt, and black pepper. Stir well.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork to separate the grains.
- Garnish with fresh cilantro before serving.
