Spicy Rice

Instructions:

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large skillet or pan, heat vegetable oil over medium heat. Add diced onions and sauté until translucent.
  3. Add minced garlic to the onions and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the rice and toast for 2-3 minutes until slightly golden.
  5. Add vegetable broth, diced tomatoes (with their juice), roasted red pepper,jalapeno pepper edamame soya beans, ground cumin, paprika, cayenne pepper, Cajun black seasoning, salt, and black pepper. Stir well.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
  7. Fluff the rice with a fork to separate the grains.
  8. Garnish with fresh cilantro before serving.

Ingredients:

  • 1 cup long-grain rice
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup roasted red pepper, diced
  • 1 cup jalapeno pepper diced
  • 1/2 cup edamame soya beans (shelled)
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust for spice preference)
  • 1 teaspoon Cajun black seasoning
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
