Fiery Cheddar & Sweet Fritters

INSTRUCTIONS

  1. In a large bowl, combine fresh corn, cheddar cheese, flour, baking powder, diced jalapenos, smoked paprika, chili flakes, cayenne pepper, green onions, salt, and pepper.
  2. Add beaten eggs to the mixture and stir until well combined. The batter should be thick enough to hold its shape.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Spoon the batter into the hot oil, forming small patties. Fry until golden brown on both sides, approximately 3-4 minutes per side.
  5. Remove the fritters and place them on a paper towel to absorb excess oil.
  6. Serve the Cheddar and Sweet Corn Fritters warm with your Philmore’s Jerk BBQ sauce.

Ingredients:

  • 1 cup fresh corn kernels
  • 1 cup grated cheddar cheese
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 jalapeno, finely diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chilli flakes
  • 1/4 teaspoon cayenne pepper
  • 2 green onions, finely sliced
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Vegetable oil for frying
  • 1/2 cup Philmore’s Jerk BBQ Sauce
