Falafel Flatbread with BBQ Sauce Duo

Instructions:

  1. Place dried chickpeas in a large bowl and cover with cold water. Allow to soak overnight.
  2. Drain chickpeas and transfer to a food processor. Add chopped onion, garlic, cumin, coriander, baking powder, salt, and pepper. Process until the mixture is coarse but not smooth.
  3. Transfer the mixture to a bowl and stir in the flour. Start with 3 tablespoons and add more if needed. The mixture should hold together but not be too sticky.
  4. Form the mixture into golf ball-sized rounds and flatten slightly to form patties.
  5. Heat oil in a deep skillet or frying pan over medium heat. Fry the falafel until golden brown, about 3-4 minutes per side. Drain on paper towels.
  6. Warm the flatbreads in the oven or on a stovetop.
  7. Assemble the falafel on the flatbreads. Add black and white sesame seeds, pomegranate, and cucumbers if desired.
